Basic Cooking Instructions For Our Wheat Berries
Kavk Pilkan - Durum O'las pilkan - Pima Club S-moik pilkan - White Sonora 1¾ cups water ½ cup rinsed Ramona Farms Kavk Pilkan (Hard Amber Durum Wheat Berries) ¼ tsp. salt Combine all ingredients in a saucepan. Bring to a rolling boil, reduce heat, cover & simmer for 1 hour or until tender. Drain and cool or serve immediately. Ramona Farms Wheat Berry, Beet and Pecan Salad with Pomegranate-Orange Vinaigrette 1 large Navel orange 1 cup cooked Ramona Farms berries of your choice 4 medium beets, roasted and cubed ¼ cup dried cranberries ¼ cup sliced I’itoi onions (green onions may be substituted) ¼ cup coarsely chopped pecans Dressing: ¼ teaspoon orange zest Juice of ½ large orange 1 teaspoon extra-virgin olive oil 1 teaspoon pomegranate juice Sea salt and fresh black pepper Zest the orange and set the zest aside. Cut the orange in half. Peel and chop 1 half of the orange and juice the other half of the orange. In a large mixing bowl, combine the orange segments, wheat berries, beets, cranberries, onion and pecans. In a small bowl, whisk together the reserved orange zest, orange juice, olive oil and pomegranate juice. Season to taste with salt and pepper. Pour the dressing over the salad, and toss. Let sit for up to 1 hour at room temperature before serving. |
