Blue Corn is a staple food in many Communities and is used in many recipes from cornmeal mush and gravy to dumplings, tamales and several sweet treats. The famous and unique Hopi Piki is made from this very finely ground cornmeal and is a pre-requisite at meals during ceremonial dances at the pueblos.
In American culture, Blue Corn chips have become a favorite snack food. Blue Corn is also highly prized for wholesome and colorful blue cornmeal muffins and blue cornbread and pancakes.
Basic Cornmeal Mush
Place 4 cups cold water in saucepan
Stir in 1 cup Ramona Farms Blue Cornmeal
Bring to a boil, then reduce heat and
simmer, stirring frequently until mush thickens and the cornmeal fluffs up slightly.
Serve with butter and salt to taste or add milk or cream and your favorite syrup!
