GA’IVSA
COARSE GROUND STONE MILLED COB- ROASTED PIMA CORN
With a texture similar to rice and the subtly sweet flavor of roasted corn, Ga’ivsa can be eaten as porridge, used as a side dish or as a risotto topped with delectibles like sauteed onions, tomatoes and green chiles covered with ground beef, bison or antelope meat!
Long ago, Ga’ivsa was a staple food of our people, the Akimel O’odham. Today, the elders in our community remember with nostalgia those days gone by when most families had their own plot of corn and worked together to hand-harvest and roast the ears over mesquite coals. The unforgettable sweet fire-roasted flavor of Ga’ivsa has made it one of the most sought-after traditional treats of our people. This delicious and wholesome dish has become a favorite at family gatherings, social events and ceremonies.
Used for traditional thin corn stew. Boil in a pot with water until soft. Top it with green chilies and shredded cheese.Cook it longer and it makes a wonderful Risotto!
Try it as a substitute for rice in your favorite recipes!
